Earl Grey with an “oomph!”
Earl of St. James
When the mundane simply will not do, brew a pot of our St. James blend of traditional Earl Grey black tea. Redolent of the oil of bergamot—the trademark of an Earl Grey—this tea bears the addition of rose petals, lavender flowers, and rosemary leaves that add a bit of “oomph!” to the classic flavor. Sweeten with white sugar and adorn with milk.
Steeping Directions

Basic
water at a rolling boil (~212° F)
1 tsp tea leaves per 6 oz. water (standard teacup)
~ 5 minutes: Drain tea strainer, serve, and enjoy!
milk and white sugar will complement
Tea Tip: For fullest flavor, use a tea strainer with enough room to allow the tea leaves to open as they steep.
Connoisseur
water at a rolling boil (~212° F)
1 1⁄2 heaping Tbsp tea leaves (32 oz. water / medium-sized teapot)
2 heaping Tbsp tea leaves (48 oz. water / large-sized teapot)
~ 2 1 ⁄2 minutes: pause timer, drain tea strainer, return, continue steeping
~ 4 1 ⁄2 minutes: start tasting every 15 seconds, steeping to your preference
~ 5 minutes: recommended steep time for “Earl of St. James.” Drain tea strainer, serve, and enjoy!
milk and white sugar will complement
Tea Tip: Taste by pouring only a quarter inch of tea into the cup.
