Here is a delightfully elegant, yet simple pomegranate goat cheese tea sandwich recipe created especially for February. Cut it into heart shapes for a special Valentine’s Afternoon Tea with your loved one or savor every last bite by trimming the crusts and cutting into triangle shapes.
Simple Pomegranate Goat Cheese Tea Sandwich Recipe
Makes 6 large heart or 12 small hearts
Prep Time: 15 min.; Assembly Time: 5 min.
Ingredients:
- 2 oz. softened goat cheese
- 2 oz. softened cream cheese
- 4 oz. softened butter
- ½ cup of pomegranate seeds
- 2 – 3 tsp. chopped fresh fennel (*plus some for optional garnish)
- 6 slices white bread (for Gluten-free, we recommend Canyon Bakehouse brand)
- 1 cucumber, halved then sliced longwise into ¼ inch thick slices
Instructions:
- In a mixer with the paddle attachment, combine the goat cheese, cream cheese, and butter; mix on medium speed until light and fluffy.
- Gently fold in the pomegranate seeds and fennel so they don’t break and the spread is evenly combined.
- Apply the pomegranate spread evenly onto bread slices.
- Add a layer of sliced cucumbers onto the bread slices and cut out the center with a heart-shaped cookie cutter.
- Garnish with a sprig of fresh fennel (optional) and serve!

- To keep the cucumber slices from sliding on your spread, pat them down with a dry paper towel before layering.
- Refrigerate for 5 minutes before cutting so the sandwiches are easier to cut.
