Apple & Boursin Tea Sandwich Recipe on Cinnamon Raisin Bread
Prep Time: 30 minutes
Makes ~20 sandwiches
Ingredients:
- 4 Tbsp. (½ stick) butter, softened
- 8 oz. (1 block) cream cheese, softened
- 1 ½ Tbsp. grated parmesan cheese
- 1 Tbsp. fresh minced parsley
- ½ tsp. dried dill
- ¼ tsp. dried marjoram
- ¼ tsp. black pepper
- 1/8 tsp. dried basil
- 1/8 tsp. dried thyme
- 1/8 tsp. salt
- 1/16 tsp. garlic powder
- English cucumbers
- honeycrisp apples
- 1 Tbsp. lemon juice
- cinnamon raisin bread
- ground cinnamon
Instructions:
- In a bowl, mix together the softened butter and cream cheese until smooth.
- Add the parmesan, parsley, and remaining herbs and spices. Mix the boursin cheese spread until it is well combined. Set aside.
- Slice the cucumbers into lengths as long as the bread slices you will be using. Then cut each cucumber into 1/8-inch thick slices.
- Core your apples, then cut into quarters. Cut each quarter apple into 3 slices.
- Dip your apple slices in a 1 Tbsp. lemon juice to 1 cup water mixture to keep the apples from browning. Dry.
- To assemble, spread a nice amount of the boursin cheese mixture onto the slices of cinnamon raisin bread. Top each slice with 2 cucumbers side by side. Cut the crusts off the bread slices, then cut into 2 rectangles. Add a slice of apple to each sandwich and sprinkle the tops with a little cinnamon.
- Serve the sandwiches the day you make them.

To Make Gluten-Free:
Substitute the regular bread for gluten-free cinnamon raisin bread.
Recipe Tips:
- If you don’t have fresh parsley, you can substitute it for 1 tsp. dried parsley.
- This recipe also works well with gala or granny smith apples if you prefer.
- Using a mandolin, if you have one, will get you a cleaner cut for your cucumbers.
- Freezing your bread slices before assembling will help to get cleaner cuts on the sandwiches.
- If you don’t have time to make the boursin spread from scratch, you can use store-bought boursin as a substitute for the first set of ingredients. Skip the first two steps of the instructions and make like normal.
