Smoked Salmon Cucumber Tea Sandwich Recipe with Tea

Smoked Salmon Cucumber Tea Sandwich Recipe

By The St. James Tearoom
This Smoked Salmon Cucumber Tea Sandwich recipe will add a dash of sophistication to your summer teatimes with very little effort! These tea sandwiches are super easy to put together and will lend an elegant flair to any gathering. We recommend pairing them with a strong black tea, such as our Margaret’s Hope Darjeeling, to complement the earthiness of the pumpernickel (scroll past the recipe to see additional tea recommendations).

Smoked Salmon Cucumber Tea Sandwich Recipe

Prep & Assembly Time: 25 minutes

Makes about 10 sandwiches

Ingredients

  • 4 oz. (1/2 stick) cream cheese, softened
  • 2 Tbsp. fresh dill, chopped
  • 1 Tbsp. fresh parsley, finely chopped
  • 1/2 tsp. lemon zest
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground black pepper to taste
  • 1/16 tsp. garlic powder

  • pumpernickel bread
  • 1 package smoked salmon
  • cucumber rounds, about 1/4-inch thick
  • fresh dill for garnish

Instructions:

  1. Combine cream cheese, dill, parsley, lemon zest, salt, pepper, and garlic powder in a bowl and stir until everything is evenly distributed.
  2. Using a 2-inch round cutter, cut pumpernickel bread into 2-inch rounds.
  3. To assemble the tea sandwiches, spread each pumpernickel round with a generous layer of the cream cheese spread.
  4. Add a slice of smoked salmon on top of the spread.
  5. Top the salmon with a slice of cucumber and a small sprig of fresh dill for garnish.

Enjoy!
