Lady Day

Remembering blues singer, Billie Holiday, this tea sings ruby red pomegranate notes. A touch of sugar enhances the rich fruity flavor, and you may wish to try it iced on a hot summer’s day.

Basic

 water at a rolling boil (~212° F)

1 tsp tea leaves per 6 oz. water (standard teacup)

~ 3 1 ⁄4 minutes: Drain tea strainer, serve, and enjoy!

white sugar will complement, but milk is not recommended

Tea Tip: For fullest flavor, use a tea strainer with enough room to allow the tea leaves to open as they steep.

Iced

 water at a rolling boil (~212° F)

4 Tbsp tea leaves (2 qt. pitcher)

 ~ 3 1 ⁄4 minutes: Drain tea strainer

white sugar to sweeten, stirred in while hot

Chill and/or add ice cubes, serve, and enjoy!

Tea Tip: To avoid diluting your iced tea, make the ice cubes out of the tea you are preparing!
