Gluten-Free Sparkling Wine Berry Gelatin Recipe

Our Gluten-Free Sparkling Wine Berry Gelatin recipe makes for a refreshing accompaniment to any celebration, particularly in the warmer months of the year. They stand out as a sophisticated and light dessert following any meal, sure to add a splash of color to your menu.

This recipe is also gluten-free, which is wonderful news for those of us who have to be on a special diet for health reasons, but who still want to celebrate with great food!  We served ours with a Cream Cheese Whipped Cream, which helps to soften the sparkling wine on your palette, but the gelatin is also delicious on its own.

Sparkling Wine Berry Gelatin Recipe

Fills about 12 two ounce glasses

Prep Time: 20 min. + chilling & garnishing

Ingredients:

For the Sparkling Wine Berry Gelatin:

  • 3 ½ tsp. unflavored gelatin
  • 2 2/3 cup sparkling wine, divided (we used a brut rosé)
  • 2/3 cup sugar
  • 4 tsp. lemon juice
  • ~18 oz. fresh berries (we used raspberries, blueberries, and blackberries)

For the Whipped Cream (Optional):

  • 4 oz. full fat cream cheese, cold
  • 7/8 cup heavy whipping cream
  • ½ cup powdered sugar
  • ½ tsp. vanilla

Instructions:

For the Fruit Gelatin:

  1. In a plastic bowl, soften the gelatin and 2/3 cup sparkling wine by microwaving for 5 minutes in short increments and stirring until gelatin dissolves.
  2. In a saucepan, combine sugar and 2/3 cup sparkling wine; stir frequently and cook until sugar dissolves, then remove from heat.
  3. Add the gelatin mixture, lemon juice, and the rest of the sparkling wine to the saucepan. Stir well to decrease the foam.
  4. Using 2 oz. glasses, place 7 – 9 individual berries in each glass; fill with the wine gelatin; chill for several hours until gelatin is firm.

For the Whipped Cream (Optional):

  1. In a chilled bowl, beat the cream cheese on medium to high for about 2 – 3 minutes, until cream cheese is smooth and free of lumps, scraping down the sides of the bowl as you go.
  2. Slowly drizzle in the heavy whipping cream and continue beating until the cream cheese resembles a liquid mixture; whip until soft peaks form.
  3. Add the powdered sugar and vanilla and continue to whip until stiff peaks form.
  4. Using a star tip and piping bag, pipe a rosette on each gelatin and decorate as desired, up to a couple of hours before serving.

Fruit Tip:

Use any combination of berries you like. We made ours with fresh raspberries, blueberries, and blackberries, but strawberries would also make a good addition—just be sure to dice them into smaller bits depending on your glass size.
