Smoked Salmon Tea Sandwiches

We imagine that our Smoked Salmon and Dill Cream Cheese Tea Sandwiches are just the sort of thing Anne would love to serve at one of her “grown-uppish” tea parties! These tea sandwiches are super easy to put together and will lend an elegant flair to any gathering. We recommend pairing them with a strong black tea, such as our Margaret’s Hope Darjeeling, to complement the earthiness of the pumpernickel.
Smoked Salmon and Dill Cream Cheese Tea Sandwiches
- 8 oz. cream cheese, softened
- 4 Tbsp. fresh dill, chopped (plus some un-chopped sprigs for garnish)
- 2 Tbsp. fresh, flat-leaf parsley, finely chopped
- 1 ⁄4 tsp. salt
- 1 ⁄8 – 1 ⁄4 tsp. freshly ground black pepper (adjust to your taste)
- 1 ⁄4 tsp. finely chopped garlic (or 1 very small clove) – can substitute with 1 ⁄8 tsp garlic powder
- 1 tsp. lemon zest
- Pumpernickel bread
- Cucumber rounds, about 1 ⁄4” thick
- Smoked salmon
- Additional salt and pepper for garnish
- Combine cream cheese, dill, parsley, salt, pepper, garlic, and lemon zest in a bowl and stir until everything is evenly distributed.
- Using any 2-inch round cutter, cut pumpernickel into 2-inch rounds.
- To assemble the tea sandwiches, spread each pumpernickel round with a layer of the cream cheese mixture. Add a cucumber slice to each piece. Sprinkle lightly with salt and pepper.
- Top each cucumber slice with a slice of smoked salmon. Top salmon with a small sprig of fresh dill for garnish. You can also sprinkle with a few capers if you like!
